The first variable is if you want the bone in or out. Preferably the best type is bone-in because it will be easier to slice and have larger amounts of ham instead of just a couple small slices. There are two types of bone-in ham; one is the leg portion of the ham where the meat tends to be leaner and it has one long bone, which makes carving easier. The second type of bone is the butt-end where there’s more tender, fattier meat, lending a richer flavor.
